Check the auction house on your server for what's selling well, and make that your main target to gather.

The final step is, what do you do with all these herbs? Well, a good idea is to find an alchemist to supply. Alchemists need herbs all the time, and a lot of them are too lazy to go out and gather them themselves. Strike a deal with one of them - you provide them with herbs, they provide you with gold or flasks or whatever else you may need from them. It's a great arrangement and gives you a steady income! It won't be long before you'll have 1000s of gold to your name, and people will be asking you how you did it.
