Gas BBQ grills either use propane or natural gas, but some models can use both types of fuel.

The heat sources for charcoal grills, on the other hand, are chunks of natural coal or charcoal briquettes. When briquettes or coal pieces are heated by fire on a certain temperature, they turn into embers, which will then cook the meat to be grilled. Infrared grills, contrariwise, were invented and patented by Thermal Engineering Corporation, or ETC, in the early half of the 1960s. The overall concept behind an infrared grill, according to BBQ review, is to use natural or propane gas to heat a specialized ceramic tile. Once it is heated enough, the ceramic tile will produce infrared radiation, which will then cook the food.

Unlike both gas and charcoal BBQ grills, infrared grills heat the meat directly, rather than heating the air that surrounds the food being grilled. A BBQ review commends this kind of grill, since the non-contact space between heat sources and the food will not produce cancer-causing ashes and burns on the food, which is dangerous for the human health if consumed on significant amount.
