Tailoring
Tailoring is the act of creating items for mages, priests, and scouts. These items include both the cloth and leather armor. This can be seen as a pretty important profession for most players (aside from those who went WarriorTemplar or Gladiator) due to being the only one able to create their armor. Not to mention they are also able to create belts, good for the warriors.
This choice is pretty much just like the armor smith, only you will be able to create items more useful for others than the tanking classes.
Some of the materials you will be using as a tailor are Thin Rawhides, Jute Fibers, Poor Dyes, Lesser Leather Hardeners, and Just Threads.
Keep in mind that although warriors are more based on heavy armor, they are also able to use leather.
Cooking
Cooking is literally what it says. You actually get to go over to a stove in-game and create your items by cooking them. This will result (if successful) in obtaining various types of food.
Food is a temporary buff of different statistics. It could be maximum health, maximum mana, attack power, or one of many other things.
Some of the various materials you will be using as a cook are eggs, meat, fish, and grass.
Gathering
Gathering is not so much a tradeskill as much as it is a normal action. This is commonly known as "Collecting" and you will experience it starting at level 1, while you are farming the Angelica.
With each item you collect you will earn a certain amount of experience and you will have a chance to boost your collection level. There is, however, a chance that you will fail the collection as well. If you fail one, you still have the chance to boost your collection level, but you will not obtain an item.
Your collection level is there to determine what items you are able to farm. For example, if you put your mouse over the Angelica you will see that it requires collection level 1. This is represented by the "1p." If you then move over to the Iron Ore you will see that it requires "p15," or "Level 15 collection." So to farm this Iron Ore you must farm the Angelica until you boost your level to 15. Due to the nature of how the leveling works, you may have to farm more (sometimes significantly more) than just one in order to boost your level.
Keep in mind that while farming the various materials you are also obtaining experience (if the harvest was successful). experience for each one you farm. That is not With Angelica, for example, you earn 60 a lot of experience, but it does help give an added incentive to farming. It keeps you from just looking at it as obtaining materials and instead lets you view it as character progression too!
When farming materials keep in mind the following things:
Only one person can harvest a material at a time
The new "node" will always spawn with three chances of collecting the material in it. If you just found a node that was left there by someone else, there is a chance that it has less than three. Along with this, it does not mean you can farm it until you obtain three. It means you can try three times. If you fail twice and succeed once, for example, that will deplete that node.
The nodes always respawn in the same area. As you explore you will undoubtedly notice many nodes. If you are farming a couple around mobs you need for a quest or just for grinding, you will notice that they respawn in the same exact spot. This helps out a lot when it comes to farming.
