The Origin Of Chorizos

Not many are aware about the colorful history behind this variety of sausage. Contrary to popular opinion, Chorizos trace its origins back to Spain and not South America.


Just like any other European nation, Spain had a history of rearing pigs and preserving meat in the form of cured sausages. When Spanish explorers returned from South America in the early 16th century, they brought with them a spice that was unheard of in Spain till then "" chili peppers.

Chili peppers, in turn, were used to obtain paprika, which gave the distinctive taste and red color to Chorizo sausages. The Spaniards were thrilled with the resourceful paprika and resolved to show gratitude. The next time their explorers embarked on a voyage to South America, Queen Isabella insisted on taking pigs on board. This is how pigs were introduced to South America. Several South American countries such as Brazil, Argentina and Cuba immediately took a liking to pig meat and came up with their own varieties of Chorizos.

The tradition of Chorizos in the USA

Americans are accustomed to the Mexican variety of Chorizo, which are considerably different from the Spanish version in texture and taste. The Mexican Chorizo uses chili in place of paprika as the primary seasoning ingredient. Also, the pork used is much higher in fat content than the Spanish variety.
