Anthony Moya Santa Fe Utilizes the Natural Ingredients of the Land

If you've never tasted a white chocolate soup you're not alone but you're also missing out! Anthony Moya Santa Fe shares his recipe for the best white chocolate veloute around.

Start with:

8 oz. of chopped white chocolate

2.5 cups of half and half

1.5 cups of milk (Moya uses heavier milk to create a more soupy texture)

Salt

2 ounces of crme fraiche

.5 vanilla bean,

.5 cup grape seed oil

To begin, bring the milk and half-and-half to a boil. Put the pre-chopped white chocolate in a blender and pour the hot milk mixture and a pinch of salt over it. Blend these ingredients and then add crme fraiche. Next, warm the grape seed oil over low heat and add the vanilla bean (make sure to scrape out all seeds). This combination will be your soup topping. Anthony Moya Santa Fe sees his best results when he lets the topping mixture macerate overnight. To serve, simply divide up the soup and add the oil topping. Moya likes to add fresh fruit like strawberries, blueberries and bananas to the soup to add some additional flavor.

Start with:

3 diced plum tomatoes

Serrano chiles, for taste

Minced garlic

1 diced red onion

cup fresh cilantro, chopped

3 large and ripe Haas avocados

Freshly squeezed lime juice, to taste

Salt, to taste

First, combine the tomatoes, chiles, garlic, onion and cilantro and then set this mixture aside. Next, cut the avocados in half, be sure to take out the pit and then cut the halves into large chunks. Add the tomato mixture to the avocados and stir gently to combine. Next, just season the salsa with lime juice and salt.
