Authentic Valencian Paella Has Already Got Its Denomination Of Origin

, you can find countless recipes of this traditional and tasteful dish. You only have to search in internet with some keywords like 'paella recipe' or 'valencian paella' and you get millions of different pages.

Many Sites in the Food and Cooking category share paella recipes and it's hard to find two exact recipes under the same name.

Restaurants, leisure clubs, private bloggers, etc. also share recipes and tricks to cook the best and most authentic" valencian paella.

For someone that is not familiar with this dish and it's willing to cook it for the first time in their lives; or, those who are not born in the Mediterranean coastal area close to Valencia and are curious about this tasty dish, I would say that all this information in the web will be very confusing.


Why there are so many people that claim to offer the authentic valencian paella recipe and, at the same time, all of them are different?

As with many other dishes, you can always find geographical variations, to adapt to the local tastes or local ingredients available; but in the case of the valencian paella, this is something that is affecting the taste of the final result to such extent, that the 'final' paella being cooked has a totally different taste and texture.

In front of all that mess, there had to be some regulation in place. And this is exactly what they have done in Valencia.

Initially promoted by a Valencian chef (Rafael Vidal from Benissano) and supported by many other famous chefs from the area, they presented to the Valencian authorities a proposal to define which recipe can have the name of 'authentic Valencian paella'. And this has been finally approved.

It consists of 10 basic ingredients and it also accepts some geographical variations.

The 10 basic and mandatory ingredients for a paella to be able to keep the name of 'authentic Valencian paella' are:

- Rice

- Oil

- Chicken

- Rabbit

- Ferraura (valencian name given to a variation of wide green beans)

- Garrofo (valencian name given to a variation of large white lima beans)

- Saffron

- Salt

- Tomato

- Water

No Restaurant or recipe can claim to offer 'authentic valencian paella' if they do not include these 10 ingredients. Period.

There are also some small variations allowed. They may include some additional ingredient on top to the before mentioned, like:

- duck

- artichokes

- rosemary


- fresh paprika

- snails (local variety)

This Regulation puts some order to the widespread use to alter the ingredients and keep the name of the dish. From now on, when you order 'authentic Valencian paella' in a Restaurant you will know, in advance, what you can expect to eat.
