It is easy to prepare a basic avocado sauce. The flesh can be mashed using a fork or blender, then add salt and pepper to taste. A thousand and one variations can be prepared out of this basic sauce. Into this basic avocado sauce you may add anything your heart desire and fancy, let us start with herbs and spices: garlic, onion, cilantro, basil, tarragon, capers, lemon, lime, dill, tomatoes, etc. To make it creamier, some dairy products may be added such as sour cream, heavy cream, egg yolk, or milk.

The end product could be used as a sauce for pan fried, grilled, roasted, and steamed fish, crabs, shrimps, lobsters and other sea foods, or meat like beef, pork, poultry, and veal. On the side, vibrant green and rainbow-colored vegetables may be added for that happy look which everyone would enjoy. It may also be used done during cocktails or during family hour.
