By soaking the meat in a mixture of ice water, vinegar and lemon juice for at least 3 days; you will get meat that is white in color as all the blood drains off. But do remember that the water also needs to be changed from time to time, and should always be kept ice cold.
If that sounds like too much trouble to take; then an easier way to prepare wild boar is just by thawing the meat overnight, one day before you intend to cook it. By thawing the required portion of meat and keeping it in a marinade of wine; your meat will become tender and easier to cook. If you want to try a different marinade, try soaking the meat in buttermilk mixed with herbs for a milder flavor, pineapple juice or even a mix of wine with Worcester sauce, pepper and spices. Some people suggest avoiding salt in a marinade as it tends to make the surface of the meat hard.

Although wild boar meat is similar to pork, it tastes best when the meat is just done. Most people prefer to barbecue the meat and then enjoy it with a meat sauce for added taste. Or you could also pan fry the meat on a low flame, especially if it has been marinated with herbs and spices. This will give the meat a nice flavor but remember not to overcook or burn it.
Another method commonly used to prepare wild boar is by smoking the meat. You are guaranteed meat that is rich in flavor and which will last you longer; but the process itself is a long one. The wild boar is completely covered in a rich medley of seasonings and spices and is then smoked in such a way, so as to prevent any fat or additives from dripping. The trick is to cook the boar slowly and evenly by rotating it from time to time. The boar may be done only after 5-6 hours and can even take an entire day to get done, especially if it is large in size.
