It may be difficult to avail of dairy and gluten free food if you live in a milk-and-bread
society where a small minority is intolerant of either of those substances. In such cases you will have to do research to find food substitutes to concoct your own recipes or avail of recipes from other people.
Dairy intolerance develops in people as a result of the disappearance from the body of the enzymes needed to digest milk properly. These enzymes were plentiful during infancy and early childhood. The sugar in milk, lactose, can pose a digestion problem in many people. Lactose intolerance can have mild or acute symptoms of abdominal pain, nausea, vomiting, flatulence and other intestinal disturbances.
On the other hand, the causes of gluten intolerance are as yet vague. Certain people, develop sensitivity to this substance which is found in food products made from cereal grasses. The intolerance may directly affect the nutrient-absorbing lining of the small intestine or may manifest elsewhere as unrelated symptoms. However, research has proven that instances of heart disorders, neurotic moods and liver ailments can be traced to gluten intolerance.
The first to find out will be a list of foods that contain lactose and gluten. Such listings are easily acquired from the nutritionist or from health stores and websites. To prevent lactose intolerance symptoms, we need to stop the intake of milk. Luckily there are enough substitutes available for providing us with the nutrients that we need from milk.
For example, to get your supply of calcium without having to take milk you could include the right fruits and vegetables in your diet. Nuts are also excellent sources of calcium. Sea foods like shrimps, oysters have plenty of calcium in them. Some people can tolerate cheese. Your diet menu should include one or another of those foods in the proper quantity.
By abstaining from wheat bread, you may fall below your requirement for body protein so you will have to beef up your dairy and gluten free diet with food items that contain plenty of amino acids. Besides fish and meat, beans, lentils, corn and coconut are also good sources of amino acids. With so much variety possible, you won't ever have to keep eating the same thing for days.
One good example of a simple but complete dairy and gluten free diet is 'Bible bread.' This type of bread is made by mixing some grains, beans and lentils together in a container. The container is then filled with water, the ingredients stirred and the water thrown out. The bowl is then filled with water again and allowed to stand for one day. On the nest day, the grains are poured into a water strainer and the rinsed with a fine spray while in the strainer. This serves to remove the last traces of acidic material in them.
The grains are then dried and processed in a grinder to make flour. This flour makes a complete dairy and gluten free bread. The bread baked from it has all the essential amino acids needed by human beings, it is also enriched with the vitamins and minerals needed to support daily activities. Besides that, this bread is absolutely fat free and non-acidic. A good dairy and gluten free diet should include 'Bible bread' because this food has everything we need to stay healthy.
