Easy recipe for Tomato & Goat's Cheese Baked Gnocchi

This easy recipe on a budget Serves 4
* 500g packet ready made gnocchi
* 1 onion
* 1 clove garlic
* 1 x 400g chopped tomatoes
* 1 tablespoon tomato puree
* 1 teaspoon dried rosemary
* 300g frozen peppers
* 75g goat's cheese
* 2 tablespoons olive oil for frying
* Salt & pepper to taste
1. Preheat the oven to gas mark 7 / 220 C.
2. Dice the the onion and fry in the olive oil for around 3 - 4 minutes until soft in a large saucepan.
3. Add the chopped tomatoes, gnocchi, garlic, rosemary, peppers and tomato puree. Season to taste and stir well. Bring to the boil then turn down the heat and simmer for 10 15 minutes stirring occasionally until the gnocchi is soft and the sauce has thickened. While it's simmering, grate or thinly slice the goat's cheese.
4. Pour the gnocchi and sauce into an oven proof dish and top with the goat's cheese. Bake in the oven for 5 10 minutes until the cheese is golden and the mixture is bubbling.
Tips: This dish freezes really well just defrost and re-heat in a microwave for a few minutes or in an oven for 20 30 minutes until piping hot.
