Gelato Versus Ice Cream - The Flavor War

. When looking for the right cool treat, you may want to make sure that you know exactly what it is and how it is made. One of these tasty dessert options is the Italian favorite, gelato. It is most commonly made with a milk or cream base with sugar and fruit or nuts added to enhance flavor.

This dessert has a long history dating back from ancient Rome and Egypt when the snow was brought from the high mountains to the ground. Later, it was enjoyed at the various banquets in Florence and was later taken up by Catherine de'Medici, where it was then perfected by Francesco Procopio dei Coltelli. It became popular in the Italian population during the 1920s and 1930s in Italy.

In English gelato is considered a soft ice cream without any extra air added. It is difficult to define exactly what it is in the United States because there is no specific ice cream standard set up for it by the USDA. Ice cream is required by law to contain at least 10% milk fat. Gelato does not have this restriction, and the term includes anything that is similar to ice cream and contains between 16% and 24% sugar. It is usually combined with water so that it does not freeze completely. Most require a base to keep it stable, so often egg yolks or skim milk are added as thickeners.

There are several differences between gelato and ice cream. As mentioned, ice cream is required to have at least 10% fat, while the other contains more milk and less cream, so it is closer to 5% to 7% fat. However, you cannot just make your own in your home ice cream machine, because it does need to be churned slower so that not as much air gets added to the mixture, making it more dense than traditional ice cream. It is also different in texture as ice cream is served frozen and gelato is typically stored and served warmer, so it is not completely frozen. Finally, because it is also less fat, it does not coat the inside of the mouth as much as ice cream does, so that you experience a more intense flavor.
