Cooking without gluten can be a tricky process. I am a vegetarian and have celiac disease, which is an intestinal disorder for those of you who do not know. Because of this I am not able to eat products with high gluten content. I also have to cook all my own meals being that most restaurants do not have a gluten free menu.
On a vacation I took about 6 months ago now, I found a little restaurant that specialized in cooking gluten free meals. I was so excited. Everything on the menu was gluten free. I had Pea and Ricotta Rice-Potato-Soy Penne and it was delicious. Then for dessert I had a chocolate brownie strawberry cream cake. It was to die for.
After filling my stomach I asked the server if they share there recipes so I can make this fantastic food at home. He went to check with the cook to see if it was ok. When he returned, he told me to check out the book Fun with Gluten Free / Low Glycemic Foods by Debbie Johnson. The cook informed me this is one of the best cook books on the market for gluten free cooking.
I have used Fun with Gluten Free / Low Glycemic cookbook for the last 5 months or so and have enjoyed every meal. So has my husband, who does not even have to eat gluten free foods, the lucky man. If you or someone you know cannot eat gluten, this is the cookbook I would recommend getting them. You can check the cookbook out at glutenfreefun.com.
