When dealing with whole fish the first and foremost aspect to look out for is the eyes of the fish which should be bright and clear as opposed to sunken or dry. When looking inside the gills they should not be a dull brown but instead a red or pinkish colour. The next thing to look out for is the skin which should be shiny, vibrant while the flesh itself should be firm.

Smell is yet another important aspect that should be considered when making a purchase. Fresh fish should smell fairly strongly of the sea while any other strong smells would indicate that the fish is less than fresh.

Fresh fish is best eaten as soon as possible if not it should be stored in the fridge. At best you could probably store it for 3 to 4 days but the freshness of the fish will be severely reduced. When doing this it is best to put the fish in freezer bag or wrap it in a wax paper. Fresh fish can also be frozen for up to 3 months


When thawing the fish for cooking later a neat trick is to put the fish in a bowl with milk. This bowl should then be placed in the fridge allowing it to thaw amidst milk giving it a fresh taste. The milk should however be discarded once the fish has thawed.
