Heartburn is painful burning in the esophagus and throat caused by acid reflux. Acid from the stomach and food float into the esophagus when the lower esophageal sphincter (LES), which is found between the esophagus and stomach, doesn't function correctly. This is usually due to stomach acid constantly touching it or it becomes irritated by some of the food we eat.
The general consensus was that it was the caffeine in the coffee that triggered heartburn but it's been determined that heartburn is caused by not one but three elements found in coffee: N-alkanoly-5-hydroxytryptamides, catechols, and caffeine. These components causes an increase in stomach acid production and this increase will flow into the esophagus and burn it. In addition, another component of coffee - N-methylpyridium (NMP) - seems to counteract the effect of the other three components and causes stomach cells to stop producing acid.
Only coffee beans that have been roasted will activate NMP. It isn't triggered in raw ones. Coffee that has more NMP will produce a stronger blend of coffee.. It means that aromatic, strong brews such as French roast and dark coffee contain more of this beneficial substance than the weaker kinds.
Coffee also has a wide range of helpful ingredients that has been known to reduce the risk of developing stroke, diabetes, Alzheimer's disease, and heart disease in addition to being a very popular drink.
Dr's. Thomas Hoffmann and Veronika Somoza were the researchers involved in identifying the effects coffee's components had on the stomach. These finding will help in discovering new ways of roasting coffee that will reduce the chances of acid-forming elements being created while maintaining coffee's rich flavor. It would certainly mean that those stricken with heartburn can finally enjoy a cup of coffee.
