Once you receive your meals, most offer detailed heat instructions on the package. You can often microwave your meals in 5 - 10 minutes or heat them in a convention oven in around 20 - 30 minutes.
You can buy meals or meal plans for 1 person. However there are also services that deliver meals for 2 people or even up to 8 (i.e. if you're ordering a special holiday feast buffet)
There are some services that deliver locally, however they tend to be higher priced (because they're smaller) than the nationwide delivery services (which can keep costs down because of a larger client base).
