Pilots are very common Halloween costumes. You could pretend to be Captain Sully who landed in the Hudson, or any famous pilot.

As a last minute costume idea, being a pilot is easy. All you need to do is dress very smartly and add a few accessories. So take a smart jacket, very clean black shoes, and smart trousers. Don't forget the white suit. This is the base of your outfit. Add brass buttons made of gold foil to the costume to help it really look like something a pilot might war. Also add gold thread around the sleeve as a pilot would have. You could create a flight manifest on a clipboard explaining that you'll be controlling flights from Chicago to Saint Louis.

If you can find a jacket and pants that are the same colour, then that's even better. Most airlines like their pilots to wear the same branding colors as the airlines's design. Also remember to close the jacket tightly, using pins if necessary, and fastening on those brass "buttons" to make it even more authentic. You could create a fake pilot headset where you could welcome "passengers" to flights from Philadelphia to Buenos Aires or flights from Houston to Cancun. You also all think up some clever things that pilots would never say to make it more fun for example: "The engines have just failed, nothing to worry about though folks."

The most important part of a pilot's costume is the hat. Without the hat, you're lost. Luckily there are many tutorials online regarding how you construct a hat.
