Kitchen fire suppression systems usually work by discharging gas over the arias or appliances on fire. The gas, sometimes carbon dioxide, sometimes potassium carbonate, is stored within the system, often in high pressure canisters.
Once the system is alerted to the presence of a fire, the gas is expelled from the pressurised canisters. A "dry" gas mix is sometimes stored within the canisters, however a wet gas solution is also used, as it prevents the fire reigniting. Refitting the gas canisters after the fire suppression system has been activated is a step that may need to be taken, however often the canisters will simply need to be refilled.
Fire suppression systems are arguably most vital and useful when installed in commercial kitchens, as the risk of kitchen fires is always high, but other industries can find them useful. Buildings and businesses that houses valuable electronic equipment, such as high grade computers, or store important information and data, can benefit from the installation of a fire suppression system, just to be safe. Occasionally even art galleries and museums have these systems installed, as when filled with "dry" gas, as a fire can be extinguished safely, and the exhibits protected from moisture, thus minimising any potential damage.
Installing a fire suppression system in a commercial kitchen is universally considered to be a very good idea. Destruction and damage of valuable kitchen equipment and appliances can be prevented, as can the occurrence of injuries and fatal accidents in the workplace, once a fire suppression system is correctly installed.
