Not digesting the carbohydrates in your body can cause allergic reactions and high blood-sugar.
Cellulase is an enzyme that helps your body digest fiber which bonds with metals and toxins in your body. You also need fiber to bond with cholesterol in your body. Bad forms of cholesterol can cause heart disease so you need to be sure that you are correctly digesting the fiber in your diet.
These are just some of the enzymes that are in your body and that help your body function correctly. Eating a diet with lots of natural whole foods will mean you get enough enzymes into your body. But you can also take enzyme supplements, though always consult with your diet before you do so.
Enzymes in your body can be broken down through several causes. For example when they are heated above 115 to 118 degrees Fahrenheit, when they come into contact with alcohol, free radicals or fluoride or through processes like canning, smoking and irradiation or other kinds of food processing.
When enzymes are broken down in this way they become foreign proteins which your body does not recognize. This can lead to autoimmune diseases where the body attacks itself and leads to inflammation of your body tissue.
This is why it is so important to stop eating as many processed foods as the average person does. There is little nutritional value in fact it is mostly damaging to your body.
