How Much Do You Know About Barbecue Sauce?
While there are so many of us that use barbecue sauce so often
, there are many people who know very little about the stuff. Everyone seems to know some of the hotbeds of grilling sauce world, like Kansas City, Chicago, Memphis, or Texas. They know that in the south they are serious about their sauces as well, but they know very little outside of that.
Here is a little history lesson about barbecue sauce. The term barbecue actually was coined by Hernando De Soto when he landed in the Caribbean and discovered the natives cooking meat over open flames on big wooden racks. He called it "Barbacoa" which is an Arwak Indian term that translates to, " to cook over coals." It is funny how some guy cooking his bratwurst in the parking lot of Lambeau Field in Green Bay Wisconsin before a Packer game can be connected with the great explorer De Soto and the Arwak Indians!
Did you know that the most popular style of barbecue sauce is the Kansas City style? Well, by far it is the biggest selling type of sauce, and many manufacturers, big and small, put out these types of sauces. Any of the sauces you see in the grocery store such as Bull's Eye, KC Masterpiece, and Sweet Baby Rays are all of this tomato-based variety. It is intended for these sauces to be put on in the last ten minutes of cooking, and make for a rich flavor and messy eating!
In Memphis they do not use sauce. Did you know that? The Memphis grilling experience usually does not use any barbecue sauce but a dry rub. In Memphis they like to slow cook their meats over low heat, using the juices of the meat to enhance to flavor and keep it moist. The rubs are of all shapes and sizes, and are mighty tasty as well.
So, you learned a little about barbecue sauce today, and when you fire up the grill at your next backyard cookout, salute Mr. Hernando De Soto and the Arwak Indians for their contributions to your grilling experience. If not for their discovery, you may be simply boiling your meats in a flavorless pot of water, adding salt, and not enjoying it very much. With the great grilling discovery, though, you can have friends over and have flavorful meats that only keep getting better as the grilling experience keeps evolving to new levels of excellence.
