Whatever material you choose, a good washing with soapy hot water to eliminate the bacteria is essential. Drying it fully after washing will remove any unsightly water marks from the surface. Cleaning copper is much more difficult than keeping glass, stainless steel or glass clean too.

Another metal that can be used to make them is aluminum. Personally I think that the increased danger of getting ill outweighs the fact that they are much cheaper. It can also leave a nasty taste in the mouth. Other things to think about are how often you intend to use the pots and pans as well as the actual ingredients that you will be cooking in them.
