How To Prepare Less Calorie Sweet

Diwali and sweets go hand in hand. But do you really need to load up on calories and send your blood sugar through the roof? Not at all! Sweeten this Diwali with lesser calories, without denying your sweet tooth the taste of sweetness. Malai Peda is the
classic Indian sweet traditionally served at festivals. It is not only delicious but also has a long shelf life. How about making it at home this Diwali, using a sugar substitute to cut down the calories without compromising on the taste.
Ingredients:
1 ltr low fat milk
1/4 tsp citric acid
2 level teaspoons cornflour
4 sachets of a sugar substitute (Eg: Sugar-free)
1/2 tsp cardamom (elaichi) powder
few strands of saffron strands
Pistachio slivers for garnishing
Method:
Bring the milk to boil in a heavy bottomed kadhai till it is reduced to half the quantity.
Dissolve saffron strands in a teaspoon of warm milk and add the mixture to the boiling milk.
Add the sugar substitute and cook for 5 minutes.
Mix citric acid in water and slowly add to the boiling milk, till the mixture curdles slightly.
Mix cornflour in a teaspoon of cold milk and add it to the boiling milk.
Continue stirring it till the mixture resembles crumbled khoya.
Add cardamom powder and mix well.
Allow it to cook.
Remove from fire and cool the mixture
Shape the mixture into balls, flatten into pedas and garnish with pistachio slivers.
Sweeten this Diwali with the nourishing Mewa Halwa, a delicious mix of dry fruits. It is not only easy to make, but will also last well beyond the festive season and makes for great gifting choices as well.
Ingredients:
1 cup of chopped, mixed dry fruits
3 tablespoons of quick-cooking oats
50gm. Gelatine
600ml water
30gm sugar substitute (Eg: Sugar-free)
10ml almond essence
Method:
Use a non-stick pan to lightly roast chopped dry fruits in a teaspoon of ghee
Bring water to boil in a kadhai
Soak gelatine in a teaspoon of water for 5 minutes and dissolve it on low heat
Add the dissolved gelatine to the simmering water and simmer for another 5 minutes as you continue to stir.
Add the sugar substitute and dry fruit mixture.
Stir till it acquires a thick, almost-dry consistency
Remove the mixture from heat and spread it on a greased tray.
Cool and refrigerate till it sets.
Cut into squares and serve.
