How To Taste Beer

Ever been to one of those snotty wine tasting events where the participants look more like they are in pain than enjoying the experience

. A favorite memory comes from the movie Tales of Terror where Vincent Price acts as the snob and Peter Lorre plays the rest of us:

When it comes to beer tasting, it doesnt need to be as formal. No need to go all Fortunato Luchresi on the brewskis. But it should have a certain decorum.

Dont Drink from the Bottle


Best practice: Youre going to want to pour the suds in a mug by slowly letting it slog down the inside of the glass from an angle. Your goal is to ultimately wind-up with an inch-and-a-half head. Occasionally youll encounter a bottle with a little yeast at the bottom. Is that the deal? Before you spill everything from the container, stop pouring and leave some of the beer in the bottle. Swirl that with whats left to mix the stuff, then continue pouring.

Whats it Look Like?

Shine a bit of light into the mug. Is the brew clear or cloudy? How about the head? Is it thin or thick? Is it a kind of brownish or pure as the driven snow? Take notes all along this exercise in beer tasting.

The Smell

Go slow with this part. Why? Heres a direct transcript from the old PBS show called Newtons Apple.

Seventy to seventy-five percent of what we perceive as taste actually comes from our sense of smell. Taste buds allow us to perceive only bitter, salty, sweet, and sour flavors. It's the odor molecules from food that give us most of our taste sensation.

Are you overwhelmed by the aroma of the malt or the hops? If its an ale, you might struggle with the answer. But take this clue: Dark beer usually swings toward a malty smell. Hoppy brew generally is light in appearance.

Anywho, sniff the liquid a couple of times before writing down your impressions.

Sippery Slope

The beer is about to coat your taste buds. The initial sip is important. There are only four things you can actually experience on your tongue: Sweet, bitter, sour and salty. The Chinese add another one: Pungent. So, what is it? Dont limit yourself to just one. Do a ten scale. Maybe you give a 5 to the salt, 2 to the sour, 4 to the bitter.

Additionally, the first sip and the last swallow will be totally different. Note the experience from both angles.

Another matter you need to express is how the brew actually feels welled-up in your mouth. A Berliner Weiss might give-off the same experience as youd get when drinking Champaign bubbly. Whereas Scotch ale may have a syrupy consistency.

Thats pretty much it. There are a couple of matters you need to consider when youre tasting beer:

Between beers, rinse your palate with some bottled water. People who sample wines may munch a cracker between glasses. Dont be tempted. Stick with H2O.


Lets say youre going to try a couple of different brands. Start with the lightest shade and work your way to the dark side.

Its useless to do a beer tasting after youve eaten. Let your buds settle before trying this practice.
