. Omena or Mukene is a small 2-inch long fish found in Lake Victoria in Western Kenya.
Fish is one of the healthiest foods in the modern diet. It is high in protein and important vitamins, AND it is low in fat.
Making African soups with fish is great but the fish must be very fresh. It is advisable if you are new to use fresh water fish. They tend to have firmer flesh and carry the fresh taste of the Lakes and Rivers.
Omena Fish soup recipe stock has lower cholesterol than stocks made with pork or beef. Oily fish also have good fish oils which help regulate blood cholesterol.
Try to use whole Omena fish as the Omena fish bones have nutrients and flavour too.
When you buy fresh Omena fish, make sure the fishmonger cleans the fish properly and thoroughly for you. We don't want to have to end up cleaning them ourselves. I cleaned fish during my Home Economics class in high school. It is not a pleasant sight. I wouldn't do it again unless absolutely necessary.
INGREDIENTS TO MAKE OMENA / MUKENE FISH SOUP RECIPE
3 Cups Dried Fish (Omena)
4 Cups Water
1/2 Cup Cooking Oil
1/2 Kilo Tomatoes
2 Large Onions Chopped
Salt to Taste
2 Cups Milk
METHODS TO MAKE OMENA / MUKENE FISH SOUP RECIPE
Wash the fish in cold water. Place in a pan and simmer gently in 4 cups of water until the water is nearly evaporated.
Drop the tomatoes into boiling water, take them out and peel. Chop the tomatoes. In a frying pan heat the oil.
Stir in the onions and tomatoes and cook gently until soft. Add the cooked fish and salt.
Stir gently taking care not to crush the fish. Add the milk and simmer for about 30 minutes. The milk forms the gravy. Serve with ugali or rice.
