Business owners should understand the importance of regularly cleaning out their grease traps
. A sink grease trap is a requirement for bakeries, restaurants and cafeterias in many areas of the country. Federal and state laws require installation and maintenance for health and environmental reasons. The device separates the grease that goes down the sink drain before it enters the drain system. Periodic cleaning will prevent a full-blown clog due to excessive grease build up.
Cleaning also prevents fines and the possibility of developing offensive odors, which is not a situation you want in a food service business. A few tools you will need in order to clean the trap are: a screwdriver (with some models of grease traps), a strainer, a ladle, and a mini snake. You should wear rubber gloves while cleaning the grease trap.
Step one is to remove the lid carefully because it will have a gasket that seals the trap. If you damage the gasket, the trap will no long seal and you will need to replace it before moving on. After opening the trap, the first thing you will see is a layer of grease and oil floating on the top of the water. Use your ladle to skim and scoop this off the water into a sealable container. Dispose of it in the trash.

An alternative method is to fill the trap with kitty litter, allow it to absorb the grease and liquid. Then, shovel/scoop it into a container to throw it away.
Check the drain opening and run a small snake down it to make sure there is no build up forming. Return the baffles and reattach the lid.
One important tip we want to share is to avoid using a cleaner on the grease trap. It will not make cleaning it out go faster, and may kill the bacteria needed to break the grease down.
Residential sinks do not need such an elaborate system to catch grease. Normally, in a home the term grease trap refers to the S shaped pipe under the sink. If your sink is clogged by grease and/or food particles, you will want to remove this fitting and clean it out.
