Magnesium deficiencies are far more common than you may think
. Deficiencies are widespread in the United States and the lack of nutrients affects human health. Magnesium is important for brain function and it is important for our muscle health. (Of course, a consumer would eat far more in a week, but this is just an illustration.) from the list of foods a consumer has eaten researchers can determine approximately how much nutrition the consumer has gotten from that diet. From such studies, researchers at the USTA estimate that 60% of Americans do not consume recommended levels of magnesium.
A key reason we do not consume enough magnesium is that many of us eat junk food, devoid of many nutrients but particularly devoid of magnesium. Magnesium is found in whole grains not in the white flour products common in junk food. However, whole grains contain a substance called
phytic acid which bind to magnesium and keep you from digesting it. Magnesium is also found in lettuce is and other leafy greens, also not a popular ingredient in junk food. To make matters worse, both the whole grains and the leafy greens that we may consume have less magnesium now than they did 50 years ago. Farmers plant lettuce that travels well rather than lettuce that is necessarily high in nutrients. In the old days, farmers planted heirloom varieties of vegetables because that's all they had. Today farmers plant hybrid vegetables that tend to be lower in nutritional value. So even if we follow a good diet, we may have a difficult time consuming enough magnesium.
