This is something you should do fairly often, both to provide backup and to make sure you have all the latest photographs and music on both your computer and on your iPhone. However at the same time you never know when you're going to end up with a broken iPhone 3g, and so it's important to have other facilities in place. If you are on holiday for instance you might not get a chance to sync your phone despite the high volume of photos you'll be taking. For such instances there are applications available in the iTunes store that can back up your phone for you wirelessly on the go.
