How do you accommodate special dietary needs in Encore?

Well, each resident that comes in here is photo is taken of their person and documented. And at the bottom is information about their name and what their dislikes and likes are as far of food choices. And if they have allergies or if they have a certain disease were they may not be able to eat a certain type of food. So that will tell us if they diabetic and they should have sugar free or non sugar foods. If they have diverticulitis then we need to eliminate seeds so we accommodate them. And there are some people who dont like sweets, but might like pudding or jello so we follow through on the cue cards and those cue cards are posted with their pictures in our kitchen area. During meal times maybe somebody doesnt want to eat a full meal and sometimes people dont want to have the choice of food for the day so we offer them a sandwich. We also have accommodating some chips if they like, jello, apple sauce. Maybe for that day all are meals are full meals, we start with soup and salad. But lets say someone doesnt understand with fish or sausages, we will plate up the dinner with the main course, starch, their potatoes, veggies, the meat and offer it to them. We bring the plate out, show it to the resident and indicate which food is the sausage, or whats pork what is on the menu for them to choose from. The best part of the meal that everyone really thus like are the desserts. We have an awesome pastry chef here. So that way we handle special residents needs.
