First, you have to define in your mind - What is SharePoint? The first two things that come to ones mind are: 1) Document storage and collaboration, and 2) a Portal system.
Document storage involves safely storing and versioning documents, not on the user's local computers, but safely on a server (in the case of SharePoint they are actually stored in an MS/SQL database). Then, it is the IT department's job to handle security, safety, backups, administration and so on.
A Portal System involves building web pages (for internal or external use), without having to be a programmer. SharePoint 2007 includes blogs, Wikis, and numerous ways to build pages, lists, team sites, personal sites, and so on. The high-end version also includes what used to be a separate Microsoft product called "Content Management Server".
