Tips For Making Home-made Wine
Recently,I obtain some methods of home-made wine from the Internet.So I try to make
some myself.And I do make it!Now here is the method of producing wine by myself.I would love to share it with people who like wine.
1.Preparing the tools.
The tools to make wine are simple.What I use includes four 10L jars,old wine bottles, a dozen of gigantic Coke bottles,a big spoon,a plastic funnel,a 1.5m plastic siphon and a nylon sock for filtering residue.
2.Perchasing the materials.
The supplies of grapes is abundant in the wholesale markets.It is said that it will be cheaper in autumn.When perchasing the grapes,choose those mature,full and healthy.The darker the grapes' color is,the better.
3.Cleaning the grapes.
This process can be cancelled if you buy the grapes in local and be sure that the grapes are not spraied pesricides before harvest.But to be safe,I always clean the grapes.Nowadays grapes is packing in plastic bags and then put them into the plastic boxes.After they are transited to the house,pour them from the plastic bags into the boxes,take the preservatives out,then put the boxes with grapes into the water and keep soaking.When soaking,you can shake the boxes several times.After 2 hours,let the water away,and wash again with rinsing.Then put them to an airy place in order to let them dry.
4.Breaking the grapes and put them into bottles,and then ferment.
The broken method is very easy.You may pick the grapes from the stem,with 3 or 5 in your hand.Then put your hand into the jar,break the grapes skin.Pay attention that the bottle cannot be full of grapes,we must stop putting to two-thirds.The alcohol of wine is produced by grapes' sugar through the fermenting of yeast.If you prefer the higher degree of alcohol,you can put some sugar or honey into the bottle several times.I base 10 kilos grapes and 1 kilo sugar to add sugar.The wine is at about 10 degrees finally,likes the dry wine on sale.After bottling,cap the bottle and place them in a warm area to let them ferment naturally.There is no need to be tightly closed--if the dust could not come in,it's OK.There is natural microzyme on the grapes skin,so there is no need for us to worry about the kinds of fermenting microzyme. The fittest indoor temperature to made wine is about 18.Generally speaking,we can see some bubbles come up in the bottle in 24 hours,soon you can find the grape juice separate out,the grape skin flow,and the bubbles is growing more and more.Then you should use a big spoon to stir the grapes 2 times every day,make the exposed skin into the juice,and let the skin soak completely.
5.Separating residue-liquid, ferment again.
After 5 ot 7 days,the fermenting is slowing down.The grape skin is floating and the colot is getting lighter.The grape seeds and grapes drop to the bottom of the bottle.We should spread the residue-liquid.Specific measures:use one siphon to pull in liquid and another,put the residues to a nylon sock,and press it from light to heavy,then twiste it likes wring out your wet clothes so that the liquid is squeezed out.totally.Then mix all the liquids and put into the jar to continue fermenting.The liquid may be turbid.Never mind.
6.Clarifying.
The second fermenting time is about a week.At that time,the liquid is clear and there is no more bubbles.You can filter the liquid one more time:If you want it to be cystal,you can settle it by egg whites.Stir the egg whites to bubbles.It will cost you more than 15 minutes,Then use the liquid to put the bubbles into the jar,also use a spoon to stir completely.Stand 2 weeks.
7.Depositing and drinking.
After standing and clarifying,you'd better put the wine into small bottle to store.Maybe a gigantic Coke bottle is a good choice.When bottling,make the bottle full,and tightly cap the bottle.When storing,it is better to put them in a lower temperature place,It is said that the best stored temperature is 13.Any time you want to drink,just pull one out.The wine made by this method tastes like the dry wine on sale.If you recieve female guests,you can add some sugar or honey into the wine.It is enough to make the female guests lost in the Sweetness.
