They say it is best to cook fresh flounder but how many of us can wait until dinner time to get flounder? Not many so we have to make sure that we store flounder in the best way to maintain its freshness till we are ready to cook it. Many times we don't even purchase fresh flounder as it is mainly frozen flounder that is sold in supermarkets. But whenever you do purchase fresh flounder you can preserve it so that it tastes great even if you don't eat it all right away.
Many people love this great tasting flatfish because of the flavor that it imparts but not many enjoy this fish when it is not fresh. Storing the fish under the right conditions can ensure that the fish will retain a certain amount of freshness and so will taste great when it is cooked. Here are some tips for storing your fresh flounder so as to maintain its taste. You will need a shallow pan, a cake rack and some crushed ice along with some paper towel.
When you get home with your flounder you must first remove the packaging. The packaging is done so as to preserve the fish while in the refrigerator at the supermarket or place of sale. After you leave the supermarket the fish will have lost some temperature and may have even thawed completely so you will have to remove it from the packaging to get rid of any water that might be contained in it.
The next thing you should do is to rinse the fish with cold running water.
Next you need to dry the fish properly. You should pat dry the fish as this is the best way to not damage the meat. Drying the fish properly is an important step to preserving the taste as storing flounder with water will give it an off taste.
Now find a shallow pan and place some crushed ice into the pan.
Put a cake rack on top of the ice, you will place the flounder on top of this rack.
Place this into the freezer and keep it at a temperature of around 32F. Ensure you set your freezer to this temperature prior to preparing the fish so that it reaches the temperature immediately upon being placed inside.
To get the most out of your flounder, use it up within 2 days of the purchase.
Following these simple tips will help you to maintain the freshness of your flounder which will have it tasting better even when it has been stored in the refrigerator for two days.
