Another thing to look at when choosing leeks is the age of the plant. Sometimes you will have to choose between young and mature leeks. Young leeks can be identified from its diameter. Young leeks usually have a diameter of an inch and a half or lesser. And they also have thinner bodies.
Mature leeks are thicker. This is why it is much tougher, fibrous and stringy even after they are cooked. Young leeks on the other hand are tender and possess a sweeter flavor. This is why they are great in any vegetable dish.
