Two Home-made Polish Soup Recipes Made Easy
Polish fare is a combination of German, Russian
, Turkish, Italian and eastern European influences. Their food regularly consists of plenty of pork, chicken, spices, noodles and winter vegetables in dishes from Poland and eggs and cream are often used. Polish people do not mind using a lot of time preparing holiday meals and some recipes can take a few of days to complete.
The Polish eat their main meal at about 2PM and this is usually a soup and then maybe herring in oil, vinegar or cream, vegetables in aspic or cured meats, and finally a meat dish like breaded pork cutlet or a roast.
Shredded root vegetables with sugar and lemon or fermented cabbage used to be popular but leaf salad is more common now. Traditional cereals or potatoes are served on the side and meals usually end with a dessert such as yeast cake or poppy seed pastries. Meat dumplings, stuffed beef slices, tripe, pork knuckles with vegetables and chilled beet soup are also popular in Poland and chilled fruit soup is a summer favorite.
Some soups, which are popular in Poland, are similar to ones you might know, like mushroom soup, tomato soup with rice or pasta, chicken soup or pea soup. Others are a bit more unusual like duck blood soup, sorrel soup, tripe soup with marjoram or chilled sour milk and beet soup.
Recipe for Chicken and Sausage Soup
This is a wholesome soup made with sausage and chicken as well as potatoes, carrots, mushroom broth and more. If you fancy something simple without overly complicated flavors, this is a nice one.
What you will need:
* 2 whole chicken breasts with skin on
* 1 small can chopped sauerkraut
* Chopped Polish sausage
* 2 chopped celery stalks
* 2 chopped potatoes
* 3 bay leaves
* 3 chopped carrots
* 1 can cream of mushroom soup
* 1 chopped onion
* 3 tablespoons dill
* 3 tablespoons vinegar
* 1 can chicken broth
* Garlic powder, to taste
How to make it:
Boil the chicken until the meat comes off the bone, then shred or chop it. Strain the water you cooked the chicken in to remove the fatty bits, and then add the chicken broth to it, as well as the mushroom soup, chicken, sausage and everything else apart from the potatoes. Simmer the soup for a couple of hours over a low heat, then add the potatoes and simmer it for thirty five minutes more.
Recipe for Dill Pickle Soup
What you will need:
* 6 cups beef broth
* 1 egg yolk
* 1 cup milk
* 4 shredded dill pickles
* 2/3 cup brine from the pickle jar
* 2 1/2 cups boiled sliced potatoes
* 2 tablespoons all purpose flour
* 2 tablespoons softened butter
* Chopped fresh dill, to garnish
How to make it:
First you need to prepare your beef broth, Heat the broth in a large pot. Combine the milk directly into the flour, after mixing thoroughly add it to the beef broth. Bring the beef,milk and flour mixture to a boil then take it off the heat. Mix and stir the butter with the egg yolk and combine it into the beef broth mixture. Add the potatoes, pickles, and the liquid from the pickle jar. Warm the soup through and serve it garnished with dill. This recipe makes ten to twelve portions and has an unusual but hearty flavor.
