Compote of Watermelon

Select a nice, ripe watermelon, cut it in half, then into slices, remove the black pits and cut the red part into small pieces; take for 1 quart of such pieces 2 cups sugar, 1 pint water, a piece of green ginger and the juice of 1 lemon; put sugar, ginger and lemon juice over the fire and boil 5 minutes; put in the melon pieces and boil slowly about 20 minutes; pour into a dish and cover with paper; when cold drain off the syrup, return it to kettle and boil 10 to 15 minutes; arrange the melon nicely in a glass dish and pour the cold syrup over it; remove the ginger before sending to table. The white part of the melon may be used for preserving. If the melon is a large one part of it may be used for compote and the other part cut up into slices and served. A third part may be used as a fruit salad.

Watermelon Salad

Cut a watermelon in two, remove the seeds and break the red part into pieces with a silver fork; put it in layers in a glass dish, sprinkle each layer with sugar and place the dish on ice for 2 hours; when ready to serve pour over 1/2 pint claret. If objected to the wine may be omitted.

How to Serve Watermelon

Watermelon is delicious when it is served ice cold. Therefore, before it is served, it should be kept on ice for a sufficient time to allow it to become thoroughly cold. Then it may be cut in any desirable way. If it is cut in slices, the slices should be trimmed so that only the pink pulp that is edible is served, the green rind being discarded. As an appetizer, watermelon is delicious when cut into pieces and served in a cocktail glass with fresh mint chopped fine and sprinkled over the top. Small pieces of watermelon cut with a French vegetable cutter make a very attractive garnish for fruit salads and other fruit mixtures. A watermelon should be cut in half lengthwise. Then cut each half of the watermelon in two and then into long pieces about 2 inches in thickness. Then arrange thewatermelon pieces nicely on an oblong plate and serve cold.

Pickled Watermelon Rind

4 qt. watermelon rind cut into strips or cubes

1 oz. stick cinnamon

1 Tb. cloves

1 cup water

3 lbs. sugar

1 qt. vinegar

Prepare the rind by cutting off the green skin and all the pink flesh on the inside. Cut this rind into strips 1 inch wide and 1 inch thick, and then into cubes, if desired. Cook in water until the rind may be easily pierced with a fork. Add the spices, water, and sugar to the vinegar, and boil until it becomes sirupy. Add to this sirup the cooked watermelon rind and bring to the boiling point. Then pack into sterilized jars, seal, cool, and store.
