Who hasn't at one point imagined owning a quiet little place in the country

, a place where you can see the stars at night, hear nothing but the rustling wind, and where all the noise and hustle of modern life can't touch you? You imagine you could sink into a relaxed state of mind, focusing on what's really important in life and just let go of all the superfluous junk.

For many, this longing for the quiet, simple life translates into a life philosophy, the theme for home dcor, or in the execution of some endangered craft or skill. There are magazines, books, and television shows dedicated to talking about and illustrating what it's like to live outside of the burgeoning urban areas and what it takes to make it there.

Nearly all of us have benefited from people who live in the country. For centuries, food has been grown outside of cities and shipped in to fill grocery stores shelves for hungry city dwellers. While there is a movement to grow tomatoes and cucumbers in city gardens and patios, when you go to the farmer's market you'll be buying primarily from growers who can't catch a subway or a city bus to get to church.

But this is why sunflower wall plaques and fat hen tea cozies can be so delightful. Evoking that serene, productive energy of a little farmhouse is soothing, even if the view outside your window is that of a brick wall. Cornstalks and straw bales on your porch for Halloween? It's almost expected.

But country gifts don't have to be about home dcor alone. Fresh churned butter, artisan cheeses, local honey, or a plump, organically-raised chicken speak of luxurious bounty. The very air of a destination far beyond the reaches of suburbia teems with a sparkling freshness that encourages you to fill your lungs in great, gulping breaths. (It can also teem with gnats, too, or the smell of cow manure, so be careful where you do your deep breathing.)

Learning about and rejoicing in the gifts of the country promotes quiet reflection about our way of life and what we hold most dear. For generations of farmers, ranchers, and others who have survived in leafy hideaways or sandy reaches by being very in tune with the world around them, living in the country isn't an option. It's something they are to the very core, and speaking the language of the earth and trees and animals around them is second nature; they learned from their parents, who learned from theirs. It's a language we can still all learn to speak.
