Insulating wine cellars above ground are a lot harder than those underground. This is because the walls for above ground cellars need to be built with a high performance vapor barrier to assist in keeping moisture from entering the cellar. It is usually recommended to use an insulation rating of R-13 for the walls and R-19 for the floor and ceiling. If youre going to use a wooden door, you may need a higher insulation rating of R-13 for the best results.
For wine cellars underground, it is commonly adequate to use an average rating of R-19 all around. If youre using foam for vapor control, continuous monitoring will be needed when the seasons change in order for you to know if it requires more insulation for greater temperature control.
