This normally involves a dealer signaling to an agent to come to the table and start playing. A signal to increase the amount of the betting range is a useful signal. Some type of ending the play signal is needed. Finally, signals that represent the numbers 1-10 are very useful. Since the typical signal is an ordinary action (scratching the nose, for instance) there has to be some signal that cancels the last one if it was made in error.
