If culture is what you are after, visit the galleries that are all over the city, including the Museum of Modern Art and the Brisbane Orchestra. There are plenty of smaller theaters and musical venues that show off Brisbane's culture. It's a great way to see for yourself that Australia isn't all about kangaroos and the outback.
Finally, the water is a great part of the Brisbane lifestyle. It's easy to find cruises that will put you in contact with some of the world's largest water mammals, including dolphins and whales. You can also go inland and find some beautiful gardens and see all of the animals that are native to Australia. There's plenty to do and it's a good idea to try to add an extra day or two to the trip. You can't see it all, but you can see a lot.
