Assassin's main defense method is Evasion, but keep in mind that you can only evade physical attacks. Increasing your Evasion does not increase your rate of dodging or resisting magical attacks. Evasion is great for PvE, but for PvP it is hard to say at this point, so let's just assume it does make a difference.
Attack Damage:
You will also want to focus on increasing your base attack damage. The higher your base damage is, the harder you hit with your skills; such as Swift Edge, Surprise Attack, etc. However, your base Attack rating is not affected by certain skills, such as Pain Rune.
When you equip an offhand weapon, the increase in your attack will be applied directly to your main hand and offhand.
What are Manastone?
Manastones are enchantment stone that you can stock in your armor and weapon for more bonuses to your stats. Depending on the weapon and armor, the number of stocked stones can vary anywhere from a single stocked to a maximum of 6 per piece of equipment. However, helmets, belts and accessories can not equip manastones.
