Essentially, there are two dissimilar metals, typically wires, that meet at a junction point. There is a part that is able to read the heat or the cold at this junction point and then turn that into a signal that travels through the thermometer and into the device where we read the temperature and translates the units of heat into a signal that the output device can understand and transmit the digital form of those units of heat or cold.
That may seem complicated and it is a bit, but that is how this process works. There are many different types of thermometers and gauges that read temperature and the concept is the same in each one.
