As in every other poker variant, the face down cards or as you may already know by now, are also called the cards in the hole, are the set of cards that only you and your opponents can see. On the other hand, the face up cards can be seen by all players at the table and in other players hand.
At the end of each round, all players have three cards face down which no one can see and four cards face up for everybody to see, this is in a typical seven card stud. While in a five card stud, at the end of the game all players have a set of face down cards each and four cards face up.
New York stud is another variation that can be incorporated to any Stud poker game, in which players may have an agreement that an outside straight will beat a pair. An outside straight refers to a players four cards in numerical order, or four cards to a straight, such agreement increases a new level to the what-beats-what table. The outside straight defeats a Pair, but be beaten by a Two Pair. If in case, a player has the outside straight showing face up all through out the game then that player will beat the one who only has one pair showing.
Another poker variation which is quite similar to New York Stud is the Canadian Stud. In Canadian Stud, a four flush which means that a player has four cards of the same suit, the players agreement adds a couple of new ranks to the what beats what table.
In this poker game variation, the concept is that the outside straight will defeat a Pair, the four flush will beat an outside straight, however a Two Pair will win over a four flush.
