These feature a multiple-tray design that rotates around a standard rotisserie rod in the center. The trays stay upright as they rotate, rather like a Ferris wheel. This keeps the food in the trays, and juices from one tray drip down to baste the food in the next. The design gives additional cooking surface and allows for cooking of a variety of foods such as ribs, vegetables, seafood, burgers and more.

These unique rotisserie add-ons also help to avoid fires from fat drippings, since the meat juices don't fall down onto the grill. The slow-cooking indirect heat of rotisserie methods brings out flavor as well as eliminating the carcinogens from blackened food cooked directly on the grill surface. Furthermore, rotisserie is a much easier way to cook than grilling, as you don't have to tend and flip food on the barbecue all the time.

Another ingenious yet simple tool for barbecue cooking is a grilling basket. This is an excellent accessory that makes it easier to barbecue fragile items like vegetables and fish that tend to come apart and stick to the grill's grating. The baskets are shaped like a small cage. They gently turn the food over by using a handle. You can get a standard or nonstick kind that is offered in several sizes.

For instance, a large basket can thoroughly cook small pieces of meat combined with vegetables. For corn, there is a corn-size basket that prevents whole ears of corn from getting burnt. Several types of baskets come with detachable, long handles. This way, you can keep the grill's lid shut and seal in the best flavors, while the food continues to cook.

Another excellent yet easy method to add delicious flavor to barbecued foods is the use of aromatic wood chips. Wood chips can be used in either gas or charcoal grills. Some gas barbecues have a built in compartment for them, while others require the addition of a smoker box or basket. The chips are soaked in water beforehand so that they will smoke slowly during cooking. Many different varieties are available, including apple, cherry, maple, hickory, alder and more. Each different wood type imparts a different smoky flavor to food, and the results are delicious.
