Here is a recipe to make your own gluten free pasta. With a few tweaks you will be able to apply this technique to any pasta style you would like to. I will be using a pasta machine through this process, if you do not have one you will have to manually roll and cut everything.
What you will need:
cup tapioca flour or sweet rice flour
cup cornstarch
teaspoon salt
1/3 cup brown rice flour
1/3 cup potato starch
2 tablespoons xanthan gum
2 tablespoons oil
4 eggs or 1 cup of flax gel
In a large mixing bowl add the tapioca flour, cornstarch, salt, brown rice flour, potato starch, and xanthan gum. Lightly beat the eggs with the oil in another bowl until it is mixed well. Slowly add the eggs and oil to the other bowl while mixing on low. Increase mixer speed to medium for 2 minutes or until dough is soft.
Spread some cornstarch on the counter and cut dough in to 6-8 pieces. Flour and flatten each piece and run through the pasta machine on the widest setting, folding in half each time. Lightly flour the dough in-between folds. Repeat 5 times or so with each piece and you will notice the dough holding together well and smoothing out. Choose your desired thickness and run through the pasta machine again. Depending on the style of pasta you would like, you can use the pasta machine to cut in to noodles, use a pizza cutter to cut sheets in to squares for ravioli, or leave it as a sheet to use for lasagna.
Remember when cooking fresh pasta you will only need to boil for a few minutes.
