Little have been known regarding the most expensive coffee beans in the whole world which is found only in some countries of South East Asia. Caf Alamid is one of the most expensive yet most sought-after coffees in the world. It has an exquisite taste and aroma that is incomparable to other coffees. The coffee bean which was called "Cafe Alamid" a native term used in the Philippines is mainly being produced in Indonesia, Vietnam, East Timor and Philippines but now widely distributed in the US and other parts of the world.

Its existence started when a group of coffee farmers noticed small droppings from Alamid or Asian Palm civets (catlike creature) every morning and that their coffee cherries were being eaten by the civets. Not mindful of any health problem or issues, native farmer from the Philippines began cleaning, roasting and brewing the civets' droppings, which in the long run formed the existence of "Alamid Coffee". As the coffee beans pass the natural way of digestion inside the civets' intestine proteolytic enzymes goes into the coffee beans, giving it distinctive taste and aroma once it goes out of the civets' intestine, where it actually retains its natural form. Civets eat only the sweetest and the ripest coffee cherries which add unusual and distinctive taste to the coffee beans.

A laboratory analysis was made with regards Caf Alamid and they set up a standard procedure in washing and roasting of the coffee beans to remove harmful bacteria. An actual study was made on Ontario Canada which shows how the coffee beans were processed inside the civets' digestive tract and how it came out as a great-tasting Caf Alamid. Stomach enzymes inside the civet's body break down proteins in the coffee beans and are excreted as a whole.
