Recalling the days of making Homemade Sausage-Pork Sausage

It is time to start making fresh homemade sausage. Here we like our deer sausage just as much as our regular pork sausage. Even better, mix it together to take away some of the "gamey" taste in the deer sausage and add a little fat. Some of my favorite childhood memories are when we would all get together to process the hog or the newly harvested deer. It may sound kind of crude, but really it is not. Our family truly believes that animals and humans have a harmonious relationship. The Native Americans had it right. We should give thanks for what the earth has provided us and not waste it. That's why we enjoyed the time we shared together doing the work to process the meat just as much as we enjoyed eating it later.

Over the years we have swapped recipes and techniques to get the right taste in our sausage, jerky and canned meat. Everyone has their mixture that includes multiple spices and mixing techniques, but it takes so much work. We finally came across the perfect recipe with one simple product, Mrs. Wages Sausage Seasoning Mix. This product is wonderful! It has no preservatives, it is all natural. It works great for pork and deer, but you can use it on pretty much any meat. Our sausage has that old timey flavor unlike anything you can buy in a store or restaurant. This mix is great for roasting meat or seasoning poultry stuffing too. One two ounce package will season up to five pounds of meat. Even better is the price of one package, $1.59 online.

This mix is so easy to use. Here are the instructions on the package:

CUT fresh meat into 1"x1" cubes (5 lbs of cubed meat equals approximately 11 cups).

COMBINE of cubed meat and of Sausage Mix Packet in a large bowl. Mix well. Repeat with second half.

GRIND 1 cup of meat mixture at a time in a food processor on medium for 5 seconds, or until desired grind is achieved. Or use meat grinder; grind twice.

REFRIGERATE overnight before forming into individual patties. Store unused sausage patties in the freezer. Cook before serving.

For spicier sausage, decrease amount of meat, or add black or red pepper to taste.

This mix contains salt, spices, brown sugar and spice extractive.

Here is a recipe from the Mrs. Wages website for Sausage Chili made with Mrs. Wages Sausage Seasoning Mix.

Ingredients:

1 lb lean ground beef

1 lb sausage (made using Mrs. Wages Sausage Seasoning Mix)

2 pints Mrs. Wages Chili Base tomatoes

2 (16 oz) cans beans (pinto or kidney) with liquid

Directions:

Brown and drain ground beef and sausage together. In a large crock pot, place meat, chili base tomatoes, and beans. Mix well. Simmer on high until heated through, about 30 minutes.

For extra heat, add red pepper flakes or chili powder to taste.

Topping Suggestions:

Shredded cheddar cheese

Sour cream

Green Onion

Oyster crackers

Chili is also great with cornbread.
