Frying oil should not be heated above 375 degrees because it will began to break down at around 400 degrees which will cause to oil to become rancid. An early sign that the oil is beginning to over heat is smoking. If you notice your oil began to smoke be sure to check it closely with a proper thermometer.

Once you are finished frying let the oil cool before removing it from the fryer. Handling hot oil can be hazardous. Drain the oil from the fryer either through the drain plug or by carefully tipping the pot and use a filter funnel to stain the oil as you pour it into a container. There is also a battery operated oil pump that you can insert into the pot to automatically

pump out the cooled oil. This pump has replaceable filters and does a good job of filtering the oil and making the draining operation safe and avoids any spills or other messes.

Cooking oil if properly handled can be easily and safely stored and re-used. Be sure to properly filter the oil as mentioned above to remove any solids. The oil must be stored in an airtight container and if stored in a cool, dark area and allowed to remain dry it should be usuable for up to six months.
