Do you love cooking? Would you like to manage your own restaurant?

If you love cooking but have the ambition to do more than work as a chef for someone else, consider doing a B.Com Hospitality Management.

A B.Com Hospitality Management is more than a chef school. It is a 3 year degree which includes 1200 hours of work-based learning and kitchen practicals as well as opportunities to apply your skills on a practical level with the many functions that are hosted on campus.

When you register you will be issued with a full chef uniform and equipment set containing knives, whisks, spatulas etc.

Over the 3 years you will gain a full understanding of food and beverage production and be able to help your guests with food and beverage choices. The course covers the same material as a regular chef school such as Culinary Science as well as Food Science and Nutrition and you will be able to plan well balanced meals and menus for any type of food outlet or functions and cater to guests of various cultural backgrounds. In addition to this your training includes the basic principles and processes of food and beverage control.

During the course of the degree your kitchen practicals will cover all areas of cookery and you will become competent in an impressive range of culinary skills. During kitchen practicals you will not only be assessed on your cooking skills but on presentation and taste of the food that you have prepared.

Different specialty areas such as working with gelatin, icing and chocolate are also covered.

You will gain an appreciation of wine by doing the Preliminary Wine Course (Cape Wine Academy).

This can be followed by our Advance Wine Studies course after you complete you degree.

Apart from work-based learning, hands on experience is gained during the many functions that are held on campus. At least 12 functions are organized each year and are entirely planned and executed by the 1st, 2nd and 3rd year students. Everything from food preparation, dcor and waiting on tables to marketing and costing is handled by the students.

This is not just a chef school but rather a management degree and as such we are not only preparing you for the practical and operational side of the industry. You will graduate with the strategic business and management skills which will enable you to progress to senior levels as a chef, or in any other area of the hospitality industry, and equip you to competently manage your own business.
