A Simple Meal When Backpacking

Tent camping is an activity my family has been involved in for many years. Our camping trips combine fishing, hiking, and swimming to the regular camp site life of cutting wood, starting a fire, food preparation, cooking, eating, games, and just relaxing. We've made a lot of good memories from our camping trips and always enjoy being in the outdoors.

There are those of us who enjoy camping in remote areas along hiking trails or like to hike into a remote lake. If you're tired of the freeze dried meals you can purchase that just need heating up or other types of packaged meals, you like this receipe. This is a great dinner to prepare after a long day of backpacking into your campsite. Although this receipe is for two people, you can easily modify it for more.

Ingredients for two people:

2 sliced chicken breasts

1 chopped green or red pepper or both

1 chopped onion

1 baked potato

2 sliced carrots

garlic as desired

1 bottle of Italian salad dressing

2 large sheets of tin foil

2 large plastic zip-lock bags

Seasoning as you desire (salt, pepper, cayenne pepper)

All the preparation is done before you leave home: prep time 20 mins

Place the chicken breasts in one of the large zip-lock bags and pour the salad dressing into the bag so the meat is covered. Freeze overnight before you leave for camping.

Place your cut and sliced veggies and garlic in the other zip-lock bag

Pack these 2 zip-lock bags in your backpack to they won't get punctured with anything

Pack your foil.

At your camp when you're ready to make dinner:

Remember you'll need to have a good fire going with cooking coals before you start this phase of getting the food ready to cook.

Layout 1 sheet of tin foil and roll-up the edges.

Pour the chicken and veggies out of the zip-lock bags onto the foil, place the other sheet of foil on top and fold the 2 sheets together. Place them on the coals of your camp fire, cook for 15 mins, turn over, and cook for another 15 mins or until done. You'll have a great tasting and satisfying meal.
