Gluten intolerance is often referred to as Celiac disease (or Coeliac disease). It is estimated that in the United States alone, 1 in 133 people suffer from Celiac disease and that number may be on the rise because a lot more people have not yet been diagnosed. Celiac disease is caused by the bodies reaction to a gluten protein usually found in wheat. That protein is known as gliadin and it can affect all types of people of any gender, age or race and can become an issue at any time during ones life. Scientists have discovered however, that gluten intolerance appears to be more prevalent among people of Northern European descent.
