Celebrate March 28, Something On a Stick Day

If you're going to celebrate Something on a Stick, we say that it might as well be something yummy to eat! So, in honor of Something on a Stick Day, March 28, we're sharing a deliciously simple recipe from our cookbook 101 Easy Entertaining Recipes.

Using items already in your kitchen, you can cook up these tasty bites for a weekend get-together with family & friends, or for a weeknight dinner with fried rice and a batch of ready-to-cook eggrolls. And they're so easy, you'll still have plenty of time to celebrate all the other wonderful things in this world that can be found on sticks.

Teriyaki Chicken Skewers

cup soy sauce

cup brown sugar, packed

2 teaspoons apricot jam

teaspoon ground ginger

2 cloves garlic, pressed

2 boneless, skinless chicken breasts, cut into 1-inch cubes

8 green onions, cut into 1-inch lengths

4 to 6 8-inch wooden skewers, soaked in water

Whisk together soy sauce, brown sugar, jam, ginger and garlic in a shallow bowl. Add chicken to sauce; toss to coat. Cover and refrigerate for one to 8 hours, stirring occasionally. Alternate chicken and onions on skewers, reserving marinade. Broil for 10 minutes, or until chicken is cooked through, turning several times and basting with reserved marinade. Discard any remaining marinade. Serve with Kabob Dipping Sauce if desired. Makes 4 to 6 servings.

Kabob Dipping Sauce

cup soy sauce

cup orange juice

cup olive oil

1 teaspoon ground ginger

1 teaspoon sugar

one clove garlic, pressed

Whisk together all ingredients in a bowl. Cover and refrigerate until serving time. Makes 1-1/2 cups.

And don't forget that skewers aren't just for kabobs! Try these clever ideas whenever you're entertaining or just want to add some fun to a meal:

For easiest-ever fruit pops, simply thread big chunks of ripe fruit like watermelon, bananas, strawberries, kiwi and peaches onto wooden skewers. Serve right away or freeze 'til solid.

Slide bite-size doughnut holes onto wooden skewers and stand the skewers in a tall vase for easy serving...what a delicious idea!

Next time you're fixing baked potatoes, thread them onto metal skewers before placing in the oven. The metal inside will help speed up the cooking time!
