Leveling this profession is one of the easiest things you can do In World of Warcraft, you won't just level it fast but you will gain loads of gold during the process. The price of ores and herbs has skyrocketed in Cataclysm and many new players get gold for their first mount simply by mining some ores or picking some herbs. There is an addon which I highly recommend and that is the Gatherer addon, this will track everything that you either pick or mine and you can therefore see which place has gotten the most of these, this way you won't spend time running around in deserted zones.

Mining: These are the most important trainers for your mining profession, as well as the location of them. You can Google for the 100% accurate coordination of the trainer.

The name of the trainers and their location is the following:

--Brock Stoneseeker (Loch Modan)

--Geofram Bouldertoe (City of Ironforge)

--Hurnak Grimmord (Hellfire Peninsula)

--Gelman Stonehand (Stormwind City)

--Dank Dizzlecut (Dun Morogh)

Best zones for mining:

The best zones for low levels are the ones where you find copper, in either Dun Morogh or Elwynn Forest. The copper ore price per stack can go up to 30 gold / stack in Cataclysm, at least on the servers I've seen. But bear in mind that the price will be different on every server. I would say that 30 gold is the average gold per stack on all of the servers combined. It may be 5 gold on some servers and 60 on others. If the price is high then you should just keep on farming and make a lot of gold. However, if you are not getting enough gold for them then I would recommend that you roll a crafting profession so that you can make them into items/potions and sell for a higher price than the raw materials were worth.

When you are done in Dun Morogh and Elwynn forst, you should go for areas where you can find Tin ore, such as the east part of Redrige Mountains and in some cases Loch Modan.

After that you would want to get your hands on some Iron or Gold ore. For these, you should go to the Alterac Mountains. But there are some other areas where these can be found, such s Ashenvale, Stranglethorn Vale, and the Badlands.

After that you will be able to mine Mithril ore, these are the ones that's selling the highest on my server with an average price of around 100 gold per stack. These can be found in Thousand Needles at the Highperch area. Badlands do have some as well and the best place in that zone is the Lethlor Ravine.
